    Beef Filets with Stilton

    From "The Coastal Living Cookbook"

    List of Ingredients


    • 4 (6-ounce) beef tenderloin filets
    • ½ tsp salt
    • ½ tsp freshly ground pepper
    • 3 Tbsp butter, divided
    • 2/3 cup dry red wine
    • 1 Tbsp chopped fresh or 1 tsp dried tarragon
    • 4 ounces Stilton or other blue cheese, crumbled


    Instructions


    1. Rub filets with salt and pepper. Melt 2 tablespoons butter in a large skillet over medium-high heat. Cook filets 6 minutes on each side or to desired degree of doneness. Remove from skillet; keep filets warm.

    2. Add wine to skillet; bring to a simmer, and cook 2 to 3 minutes or until wine reduces by half. Stir in remaining 1 tablespoon butter. Add chopped tarragon. Remove from heat.

    3. Arrange filets on a serving platter, and drizzle with wine reduction sauce. Sprinkle with crumbled cheese. Garnish, if desired.

      Makes 4 servings.
