Beef Filets with Stilton

List of Ingredients
- 4 (6-ounce) beef tenderloin filets
- ½ tsp salt
- ½ tsp freshly ground pepper
- 3 Tbsp butter, divided
- 2/3 cup dry red wine
- 1 Tbsp chopped fresh or 1 tsp dried tarragon
- 4 ounces Stilton or other blue cheese, crumbled
Instructions
- Rub filets with salt and pepper. Melt 2 tablespoons butter in a large skillet over medium-high heat. Cook filets 6 minutes on each side or to desired degree of doneness. Remove from skillet; keep filets warm.
- Add wine to skillet; bring to a simmer, and cook 2 to 3 minutes or until wine reduces by half. Stir in remaining 1 tablespoon butter. Add chopped tarragon. Remove from heat.
- Arrange filets on a serving platter, and drizzle with wine reduction sauce. Sprinkle with crumbled cheese. Garnish, if desired.
Makes 4 servings.
