    Brown Sugar Pork Chops

    Recipe Introduction

    "This brown sugar marinade was a revelation for me! It can be used for chops (as I've done here) or for stir-fries with your favorite vegetables. The soy sauce and brown sugar just need a few minutes to work their magic and flavor the pork, so there's no need for advance planning. Just be sure to wipe off as much of the marinade as possible before cooking to allow the pork to sear and prevent burning. This marinade has replaced all the bottled marinades I used to keep in my fridge, because it is so easy and quick."

    List of Ingredients

    â—¦ ¼ teaspoon kosher salt
    â—¦ ¼ teaspoon coarsely ground black pepper
    â—¦ 3 tablespoons low-sodium soy sauce
    â—¦ ½ cup packed light brown sugar
    â—¦ 4 (1-inch thick) pork loin chops (1 ¾ to 2 pounds total)
    â—¦ 4 tablespoons vegetable oil

    Recipe

    In a large bowl, combine the salt, pepper, soy sauce, and brown sugar and whisk into a slurry. Add the pork chops and turn to coat well. Cover with plastic wrap and let sit for 20 minutes.

    Heat a large heavy skillet over medium-high heat, then add 2 tablespoons of the vegetable oil. Once the oil is hot, dab off any excess marinade from the pork with paper towels and add the pork chops to the pan. Cook the pork until nicely browned on the first side, 4 to 5 minutes. Add the remaining 2 tablespoons oil and give it a few seconds to heat, then flip the pork chops and brown on the other side, another 4 to 5 minutes. Transfer the pork chops to a plate.

    Add the remaining marinade from the bowl to the skillet and allow it to thicken for several minutes. Serve the chops with the sauce drizzled over the top.
