    Classic Southern Meatloaf

    "If you ever need or want something from me, your odds of getting a 'yes' are a lot better after serving up this meal. Meatloaf is a cheap, filling crowd-pleaser that evokes savory comfort in every bite. When I was growing up, my family ate this with hot rice and either collard greens or green beans as a side dish. Such a dinner was always delicious, but the leftovers always garnered my greatest attention in the form of a meatloaf sandwich. I've written this recipe to ensure that there are plenty of leftovers for lunch the following day. Just reheat any remaining meatloaf, slice it as thick as you like, and sandwich it between two slices of white bread — mayo or cheese is optional — and you'll be as full as a tick on a bloodhound."

    List of Ingredients

    ◦  Vegetable cooking spray
    ◦  2 white bread slices, crusts removed
    ◦  ½ cup milk
    ◦  1½ pounds ground chuck
    ◦  ½ medium Vidalia or sweet onion, grated
    ◦  1 clove garlic, minced
    ◦  1 large egg, lightly beaten
    ◦  1 teaspoon kosher salt
    ◦  ½ teaspoon freshly ground black pepper
    ◦  2 tablespoons finely chopped fresh parsley
    ◦  ¾ cup ketchup
    ◦  1 teaspoon whole grain mustard
    ◦  1 tablespoon plus 1½ teaspoons soy sauce

    Recipe

    Preheat oven to 375° F. Lightly grease a 13 x 9-inch baking dish with cooking spray. Combine bread and milk in a large bowl, and let stand 5 minutes. Add meat and next 6 ingredients; combine mixture using hands and being careful not to overcook meat. Shape mixture into a 12- x 4-inch loaf, and place in baking dish.

    Bake at 375° F for 30 minutes.

    Meanwhile, stir together ketchup, mustard, and soy sauce in a small bowl. Remove meatloaf from oven, and drain. Spread ketchup mixture over meatloaf. Bake 15 more minutes or until a meat thermometer inserted into thickest portion registers 165° F. Remove from oven, and let stand 5 minutes before slicing and serving.
