    Dixie White's Oven Swiss Steak

    List of Ingredients


    • 1-1/2 lbs. round steak or chuck steak*
    • 1/4 cup flour
    • 1 tsp salt
    • 2 Tbsp shortening, olive oil or bacon grease
    • 1 can (16 ounces) cut-up tomatoes, undrained*
    • 1/2 cup chopped celery
    • 1/2 cup chopped carrots
    • 1/2 cup (or more) chopped onion
    • Garlic powder to taste
    • 1/2 tsp Worcestershire sauce


    Instructions


    1. Cut meat into serving-size pieces. Combine flour, salt and garlic powder; pound 2 tablespoons of this mixture into meat and set remaining mixture aside.

    2. Brown meat on both sides in hot shortening, olive oil or bacon drippings. Transfer meat to a 7x12-inch baking dish.

    3. Blend the remaining flour mixture into pan drippings; stir in undrained tomatoes, celery, carrots, onions and Worcestershire and cook until bubbly and thick. Pour sauce over meat and bake at 350 degrees (F) until tender, about 1 hour and 20 minutes.

      Makes 6 servings.

      * White says, "I add tomato juice or a small can of V-8, as most cans of tomatoes are only 14-1/2 ounces now. I also pound the steak before I pound in the flour mixture."
