Flemish Pork Chops

- 6 pork chops, trimmed of fat
- 2 Tbsp butter
- 1 large onion, chopped
- 3/4 cup burgundy
- 3/4 cup chicken broth
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp basil
- 2 Tbsp tomato paste
- 1 Tbsp flour
- 2 Tbsp butter

- Hot buttered noodles
Instructions
- Brown pork chops in butter. Remove chops and saute onion in same pan. Mix burgundy, broth, and tomato paste together in a mixing bowl.
- Return chops to pan; season with salt, pepper, and basil. Pour wine mixture over chops, cover and simmer for one hour or until chops are tender. Remove chops to platter.
- Mix butter and flour into a paste and stir into the pan juices until they thicken. Pour over chops and serve with hot buttered noodles.
Makes 6 servings.
