    Garlic & Rosemary Roast Leg of Lamb

    List of Ingredients


    • 6 Tbsp (3/4 stick) unsalted butter, at room temperature
    • 6 large garlic cloves
    • 1/3 cup fresh rosemary leaves (or 3 Tbsp dried)
    • 2 Tbsp minced fresh parsley
    • 1 tsp salt
    • 1 tsp pepper
    • 1/4 tsp ground allspice
    • 2 lemons, thinly sliced
    • Fresh rosemary sprigs and lemon wedges, for garnish


    Instructions


    1. Position rack in lowest third of oven and preheat to 350 degrees (F).

    2. Combine first 7 ingredients in processor; blend until smooth.

    3. Place lemon slices on bottom of roasting pan forming a rectangle the same size as the lamb. Rub butter mixture evenly over lamb; place lamb atop the lemon slices.

    4. Roast until thermometer inserted into thickest part of meat reads 135 degrees for medium-rare (about 2 hours) or to desired degree of doneness. Let roast stand 15 minutes.

      Transfer to a platter and garnish with sprigs of rosemary and lemon wedges.

      Makes 6 servings.
