Garlic & Rosemary Roast Leg of Lamb

- 6 Tbsp (3/4 stick) unsalted butter, at room temperature
- 6 large garlic cloves
- 1/3 cup fresh rosemary leaves (or 3 Tbsp dried)
- 2 Tbsp minced fresh parsley
- 1 tsp salt
- 1 tsp pepper
- 1/4 tsp ground allspice
- 2 lemons, thinly sliced
- Fresh rosemary sprigs and lemon wedges, for garnish
Instructions
- Position rack in lowest third of oven and preheat to 350 degrees (F).
- Combine first 7 ingredients in processor; blend until smooth.
- Place lemon slices on bottom of roasting pan forming a rectangle the same size as the lamb. Rub butter mixture evenly over lamb; place lamb atop the lemon slices.
- Roast until thermometer inserted into thickest part of meat reads 135 degrees for medium-rare (about 2 hours) or to desired degree of doneness. Let roast stand 15 minutes.
Transfer to a platter and garnish with sprigs of rosemary and lemon wedges.
Makes 6 servings.
