Miso-Marinated Flank Steak

- 4 Tbsp brown or red miso
- 1/4 cup sake
- 1 Tbsp peeled and finely chopped fresh gingerroot
- 1 tsp finely grated lemon zest
- 1/8 tsp crushed red pepper flakes
- 1/8 tsp ground black pepper
- 1 tsp vegetable oil
- 1 flank steak, about 2 lbs.
Instructions
- Stir together the miso, sake, ginger, lemon zest, pepper flakes, black pepper and oil. Score edge of steak so it doesn't curl when cooking, and place in a food-grade, zip-top plastic bag. Add miso marinade, close bag and refrigerate overnight. Turn bag occasionally.
- About 1 hour before cooking, remove steak from refrigerator. Place oven rack about 4 inches from broiler. Remove steak from marinade, but don't discard remaining marinade. Place on broiler pan.
- Broil steak 6 minutes. Turn, and pour remaining marinade over steak. Continue broiling about 4 to 5 minutes, or until steak is medium-rare in center. Let rest a few minutes before carving across the grain into thin slices.
Makes 4 to 6 servings.
