    Mushroom Meat Loaf

    List of Ingredients


    • 2 tsp olive oil
    • 5 cups sliced mushrooms
    • 1 sweet red pepper, finely chopped
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 tsp dried basil
    • 1 egg, beaten
    • 1/4 cup chili sauce
    • 1/2 cup dry bread crumbs
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1-1/2 lbs. lean ground beef
    • 2 Tbsp all-purpose flour
    • 1-1/2 cups beef stock
    • 2 tsp red wine vinegar


    Instructions


    1. In large nonstick skillet, heat oil over medium heat; cook mushrooms, pepper, onion, garlic and basil, stirring often, for 15 minutes or until onions are softened and liquid from mushrooms is evaporated. Set skillet aside.

    2. In bowl, stir together egg, chili sauce, bread crumbs, salt and pepper. Mix in beef, then 1 cup of the mushroom mixture. Pack lightly into ungreased 8x4-inch loaf pan. Bake in 350-degree oven for 60 to 75 minutes or until meat thermometer registers 170 degrees (F). Let stand for 5 minutes. Drain off fat.

    3. Meanwhile, in same skillet, sprinkle flour over remaining mushroom mixture and return to medium heat; cook, stirring, for 1 minute. Whisk in stock and red wine vinegar; bring to boil. Reduce heat and simmer, stirring, for 5 to 8 minutes, or until thickened. Serve with meat loaf.

      Makes 6 servings.
