Mushroom Meat Loaf

- 2 tsp olive oil
- 5 cups sliced mushrooms
- 1 sweet red pepper, finely chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 egg, beaten
- 1/4 cup chili sauce
- 1/2 cup dry bread crumbs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1-1/2 lbs. lean ground beef
- 2 Tbsp all-purpose flour
- 1-1/2 cups beef stock
- 2 tsp red wine vinegar
Instructions
- In large nonstick skillet, heat oil over medium heat; cook mushrooms, pepper, onion, garlic and basil, stirring often, for 15 minutes or until onions are softened and liquid from mushrooms is evaporated. Set skillet aside.
- In bowl, stir together egg, chili sauce, bread crumbs, salt and pepper. Mix in beef, then 1 cup of the mushroom mixture. Pack lightly into ungreased 8x4-inch loaf pan. Bake in 350-degree oven for 60 to 75 minutes or until meat thermometer registers 170 degrees (F). Let stand for 5 minutes. Drain off fat.
- Meanwhile, in same skillet, sprinkle flour over remaining mushroom mixture and return to medium heat; cook, stirring, for 1 minute. Whisk in stock and red wine vinegar; bring to boil. Reduce heat and simmer, stirring, for 5 to 8 minutes, or until thickened. Serve with meat loaf.
Makes 6 servings.
