List of Ingredients
- 2 eggs
- ¾ cup milk
- 2/3 cup fine dry breadcrumbs or 2 cups soft breadcrumbs
- ¼ cup finely chopped onion
- 2 Tbsp snipped fresh parsley
- 1 tsp salt
- ½ tsp dried leaf sage, basil, or oregano, crushed
- 1/8 tsp ground beef (or lamb, or pork)
- ¼ cup catsup
- 2 Tbsp packed brown sugar
- 1 tsp dry mustard
Instructions
- Preheat oven to 350° F.
In a large bowl, use a fork to beat together eggs and milk; stir in bread crumbs, onion, parsley, salt, sage, and pepper. Add ground meat; mix well. Lightly pat mixture into an 8x4x2-inch loaf pan.
- Bake for 1 to 1¼ hours, or until an instant-read thermometer inserted in center registers 160° F. Spoon off fat.
- In small bowl, combine catsup, brown sugar, and mustard; spread over meat. Bake for 10 minutes more. Let stand for 10 minutes before serving.
Makes 8 servings.

MASHED POTATOES
Peel and quarter 3 pounds baking potatoes (such as russet or Yukon gold). In a covered 4-quart Dutch oven, cook potatoes and 1 teaspoon salt in enough boiling water to cover for 20 to 25 minutes or until tender; drain. Mash with a potato masher or beat with an electric mixer on low speed. Add ¼ cup butter. Season to taste with additional salt and ground black pepper. Gradually beat in enough milk to make light and fluffy. If desired, serve with additional butter.
Makes 8 servings.
