    Pork Chops in Beer

    List of Ingredients


    • 4 thick-cut pork chops
    • Salt
    • Pepper
    • 1 Tbsp vegetable oil
    • 1 onion, sliced thin
    • 2/3 cup dark ale (Samuel Smith Nut Brown Ale, or other)
    • 1 to 2 Tbsp cider vinegar
    • 1-1/2 Tbsp coarse-ground mustard
    • 1/2 cup sour cream
    • Chopped green onions


    Instructions


    1. Salt and pepper the chops on both sides. Heat the oil in a skillet until very hot.

    2. Sear the chops on both sides, about 2 minutes per side, until brown. Remove the chops and set aside. Sauté the onions in the pan until soft.

    3. Place the chops on top of the onions, then pour the beer and vinegar over them. Cover and simmer until the chops are tender, about 20 minutes.

    4. Remove the chops from the pan, stir in the mustard and reduce the sauce. Adjust the seasonings as needed (you may need more vinegar).

    5. Remove from the heat. Stir in the sour cream. Serve the chops plated with the sauce and garnished with green onions.

      Serves 4
