Pork Chops in Beer

List of Ingredients
- 4 thick-cut pork chops
- Salt
- Pepper
- 1 Tbsp vegetable oil
- 1 onion, sliced thin
- 2/3 cup dark ale (Samuel Smith Nut Brown Ale, or other)
- 1 to 2 Tbsp cider vinegar
- 1-1/2 Tbsp coarse-ground mustard
- 1/2 cup sour cream
- Chopped green onions
Instructions
- Salt and pepper the chops on both sides. Heat the oil in a skillet until very hot.
- Sear the chops on both sides, about 2 minutes per side, until brown. Remove the chops and set aside. Sauté the onions in the pan until soft.
- Place the chops on top of the onions, then pour the beer and vinegar over them. Cover and simmer until the chops are tender, about 20 minutes.
- Remove the chops from the pan, stir in the mustard and reduce the sauce. Adjust the seasonings as needed (you may need more vinegar).
- Remove from the heat. Stir in the sour cream. Serve the chops plated with the sauce and garnished with green onions.
