Pork Roast with Cherry Salsa

List of Ingredients
- 1 (4-lb.) loin of pork
- Seasonings to taste: lemon pepper, thyme, paprika, freshly ground pepper, and salt
- 1 Tbsp olive oil
- 1/2 cup red wine
- 1 onion, chopped
- 3 stalks celery, chopped
- 1 clove garlic, minced

- -- For the Cherry Salsa --
- 1/3 cup chopped onion
- 1/3 cup chopped green pepper
- 1/3 cup chopped green chiles
- 1/3 cup dried cherries, chopped
- 1-1/2 Tbsp champagne vinegar (may substitute white vinegar)
- 1-1/2 Tbsp chopped cilantro
Instructions
- Season roast with the seasonings to taste.
- Heat olive oil in a large saute pan and sear the roast. After browning on all sides, place the meat in a large roasting pan. Deglaze the pan with 1/2 cup red wine. Then add the chopped onion, celery, and garlic to the pan with the wine; pour over the roast.
- Bake at 350 degrees (F) for 2 hours or until roast reaches desired doneness.
- Mix all of the cherry salsa ingredients together and spoon over the roast to serve.
