    Pork Roast with Cherry Salsa

    List of Ingredients


    • 1 (4-lb.) loin of pork
    • Seasonings to taste: lemon pepper, thyme, paprika, freshly ground pepper, and salt
    • 1 Tbsp olive oil
    • 1/2 cup red wine
    • 1 onion, chopped
    • 3 stalks celery, chopped
    • 1 clove garlic, minced
    • *
    • -- For the Cherry Salsa --
    • 1/3 cup chopped onion
    • 1/3 cup chopped green pepper
    • 1/3 cup chopped green chiles
    • 1/3 cup dried cherries, chopped
    • 1-1/2 Tbsp champagne vinegar (may substitute white vinegar)
    • 1-1/2 Tbsp chopped cilantro


    Instructions


    1. Season roast with the seasonings to taste.

    2. Heat olive oil in a large saute pan and sear the roast. After browning on all sides, place the meat in a large roasting pan. Deglaze the pan with 1/2 cup red wine. Then add the chopped onion, celery, and garlic to the pan with the wine; pour over the roast.

    3. Bake at 350 degrees (F) for 2 hours or until roast reaches desired doneness.

    4. Mix all of the cherry salsa ingredients together and spoon over the roast to serve.

      Serves 4
