Pork Tenderloin with Apricot Glaze

- 1 (12-ounce) pork tenderloin
- Salt and freshly ground black pepper
- Apricot Glaze (recipe follows)
- 4 firm apricots, halved and pitted
Instructions
- Preheat grill. Oil grill rack. Season pork with salt and pepper to taste.
- Place pork on grill and grill 10 minutes. Brush generously with glaze. Place apricots, cut-side up, on grill. Brush with glaze. Grill pork, brushing occasionally with glaze, 15 minutes longer until meat is no longer red-pink in the center. Apricots should be soft, but not mushy. If necessary, remove fruit from grill before pork is done. To serve: Cut pork into 1/2-inch-thick slices and arrange on platter with apricots. Serve any remaining sauce on the side.
Makes 2 servings.
APRICOT GLAZE
6 Tbsp apricot preserves
2 Tbsp honey
2 Tbsp rum
3 Tbsp Dijon mustard
Salt and freshly ground pepper
Combine preserves, honey, rum, mustard and salt and pepper to taste in saucepan. Simmer over low heat until preserves melt and mixture blends together, about 3 minutes. (Makes about 3/4 cup.)
Final Comments
If desired, pork can be cooked in oven at 450 degrees (F) 25 to 30 minutes. Here's how: Place tenderloin in shallow roasting pan and cook 10 minutes. Baste with glaze, add apricots and continue cooking 15 to 20 minutes longer.
