Red Wine and Rosemary Porterhouse

- -- Red Wine Marinade -- *
- 1/4 cup dry red wine
- 1 Tbsp Worcestershire sauce
- 1 Tbsp tomato paste
- 1 Tbsp Dijon mustard
- 1 Tbsp balsamic vinegar
- 1 Tbsp chopped fresh rosemary leaves
- 1 large garlic clove, crushed with garlic press

- -- Porterhouse --
- 1 beef loin porterhouse or T-bone steak, 1-1/2 inches thick (about 1-1/2 lbs)
- 1 lemon, cut into wedges
Instructions
- Prepare Red Wine Marinade: In small bowl, stir all marinade ingredients to combine.
- Place steak in large self-sealing plastic bag; pour marinade over steak, turning to coat. Seal bag, pressing out excess air. Let stand at room temperature 15 minutes to marinate or refrigerate for up to 1 hour, turning once.
- Remove steak from bag; discard marinade. Place steak on grill over medium heat and cook 15 to 20 minutes for medium-rare or to desired doneness, turning steak once.
Thinly slice steak and serve with lemon wedges.

Final Comments
* Since the marinade is robust, it can marinate the steak(s) in 15 minutes; however, marinate for up to 1 hour for a more intense flavor.
Note: The Red Wine Marinade is also good on lamb, pork, or poultry.
