Sirloin with Mushroom-Wine Sauce

- 1 Tbsp butter
- 1/3 cup shallots, chopped
- 1 cup mushroom caps, stems removed
- 1 cup dry red wine
- 1 cup beef broth
- Cracked black pepper
- 4 oz. sirloin steak
- 1 Tbsp low-sodium soy sauce
- 2 tsp cornstarch
- 1 tsp oregano
Instructions
- Melt butter in cast iron skillet over medium heat. Add shallots and mushrooms; saute for 4 minutes. Add wine and 3/4 cup beef broth; cook for 5 minutes, stirring frequently.
- Remove mushrooms with slotted spoon; place in bowl. Increase heat to high and cook wine mixture until reduced to 1/2 cup. Add to mushroom mixture.
- Sprinkle steak with cracked black pepper and add to skillet. Cook on both sides for 3 minutes each or until steak reaches desired degree of doneness. Place on platter; keep warm.
- Combine soy sauce and cornstarch. Add remaining beef broth to skillet, scraping to loosen browned bits. Bring to a boil. Add mushroom mixture, cornstarch mixture, and oregano; return to a boil, cook for 1 minute, stirring constantly.
Serve sauce over steaks.
