Spice-Rubbed Pork Tenderloin with Potato Puree

- 1 pork tenderloin
- 1 Tbsp butter
- .
- -- Rub --
- 2 Tbsp salt
- 6 Tbsp sugar
- 1 Tbsp dry parsley
- 1 Tbsp paprika
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
- 1 Tbsp cumin
- 1 tsp cayenne pepper
- 1 tsp black pepper
- .
- -- Potato Puree --
- 3 Yukon Gold potatoes
- 1 Tbsp butter
- Salt and pepper to taste
Instructions
- Prepare rub: Mix spices in small bowl. Coat tenderloin with rub and let stand for at least 20 minutes.
- Prepare potato puree: Fill medium pan with enough water to cover three potatoes. Add a dash of salt. Boil potatoes in salted water until tender, about 35 minutes. Pull potatoes from water and mash. Add butter, salt and pepper. Use some of the water the potatoes were cooked in to thin potatoes, if necessary.
- Heat 1 tablespoon butter in a large saute pan over medium heat. Add pork tenderloin and sear on all sides. Continue cooking for 12 to 15 minutes. Remove meat from pan and let stand for 5 minutes.
Place some potato puree on dinner plates. Slice pork and place on top of puree.
