    Tequila Sunrise Lamb Chops

    List of Ingredients


    • 8 lamb loin chops, cut 1/4-inch thick
    • *
    • -- Marinade --
    • 1/2 cup extra virgin olive oil
    • 1/4 cup tomato juice
    • 1/4 cup balsamic vinegar
    • 1/4 cup tequila
    • 1/4 cup honey
    • 3 Tbsp soy sauce
    • 1 pkg. Good Seasons Garlic & Herb Salad Dressing Mix
    • 1/2 tsp crushed red pepper
    • *
    • -- Mango Salsa --
    • 1 peeled and seeded mango, diced
    • 2/3 cup well-drained pineapple, crushed
    • 1/4 cup chopped green onions
    • 1 jalapeno pepper, seeded and diced
    • 1 Tbsp extra virgin olive oil
    • 1 Tbsp honey


    Instructions


    1. Place lamb chops in a gallon-size plastic zipper bag. Blend marinade ingredients and add to bag. Seal bag and turn to blend ingredients and coat lamb. Marinate in refrigerator for 1 to 2 hours, or overnight.

    2. Meanwhile, in a medium bowl, blend salsa ingredients. Cover with plastic. Refrigerate to mingle flavors.

    3. Remove chops from marinade. Place marinade in saucepan and heat to boiling.

    4. Grill or broil lamb chops over medium-high heat 5 to 8 minutes per side, or until cooked as desired, basting with remaining marinade.

    5. Arrange chops on serving platter, spooning salsa alongside. Garnish with green onion fans, if desired.

      Makes 4 servings.
