    Tried-and-True Meatloaf

    Source of Recipe

From "125 Best Ground Meat Recipes" by Ilana Simon

    List of Ingredients

    • 1½ pounds lean ground beef
    • 1 cup milk
    • ¾ cup quick-cooking rolled oats
    • 2 Tbsp minced onion, plus ¼ cup (divided)
    • ¼ tsp salt
    • ¼ tsp freshly ground black pepper
    • 1 cup catsup
    • ½ cup water
    • 3 Tbsp white vinegar
    • 2 Tbsp packed brown sugar
    • 2 Tbsp Worcestershire sauce

    Instructions

    1. Preheat oven to 400° F. Coat a 9- x 5-inch loaf pan with vegetable oil spray (unless using silicone, which does not need to be greased). In large bowl, combine ground beef, milk, oats, 2 tablespoons minced onion, salt and pepper. Mix well. Pack loosely into prepared loaf pan. Bake in preheated oven 10 minutes.

    2. Meanwhile, in bowl, combine catsup, water, remaining onion, vinegar, brown sugar, and Worcestershire sauce. Pour sauce over meatloaf.

    3. Return to oven and bake 75 to 80 minutes longer, checking after 60 minutes, or until thermometer inserted into center registers 160° F. Let stand 5 minutes. Drain off excess liquid before slicing. This is a traditional meatloaf best served with mashed potatoes.

      Makes 4 to 6 servings.
