    Chocolate Whipped Cream

    From "Williams-Sonoma: Cooking at Home"

    List of Ingredients


    • 2 cups cold heavy cream
    • 1 cup sifted confectioners' sugar
    • ½ cup sifted unsweetened cocoa powder


    Instructions


    1. Using a chilled bowl and chilled beaters, whip the cream for a few minutes until it starts to thicken.

    2. Add the sugar and cocoa powder and continue beating until it stands in stiff peaks. Use right away, or spoon it into a fine-mesh sieve placed over a bowl (so any liquid it releases won't dilute the cream), cover with plastic wrap, and refrigerate until ready to use.

    3. After topping the dessert with the cream, serve it right away.


      Makes about 4 cups


      • A frosting alternative:
      Pipe a pretty swirl of this chocolate-flavored cream onto a cupcake in place of frosting.
