In a Pinch Buttermilk

- 1 cup milk
- 1 tablespoon lemon juice or white wine vinegar
Instructions
- In a small bowl, whisk together the milk and lemon juice or vinegar. Let stand at room temperature until slightly thickened and curdled, 5 to 10 minutes. This mixture will not be as thick as regular buttermilk, but it works just as well in a recipe.
Makes 1 cup
Other Buttermilk Substitutes:
• ¾ cup plain yogurt thinned with ¼ cup water
• ¾ cup sour cream thinned with ¼ cup water
