Mascarpone Cream

- 1 cup mascarpone cheese (8 ounces)
- 2 cups heavy cream
- 1/4 cup sugar
- 1 tsp lemon zest
Instructions
- Place all ingredients in a medium bowl and whip with an electric mixer set on medium-high speed until soft, fluffy peaks form -- 1 to 2 minutes. Transfer to a clean bowl, cover, and chill for up to 30 minutes.
Serve with vanilla-poached apricots, or alongside cake or pie.
Makes 4 cups.
