Nutty Vanilla Spread

â—¦ 4 ounces roasted, salted macadamia nuts
â—¦ 4 ounces blanched slivered almonds
â—¦ 2 teaspoons pure vanilla extract
â—¦ â…” cup whole milk
â—¦ 1 vanilla bean, split lengthwise
â—¦ 14 ounces white chocolate, chopped
â—¦ Pinch salt (optional)
Recipe
In the bowl of a food processor, process nuts and vanilla extract until fine, about 2 minutes.
In a small saucepan over medium heat, warm milk and vanilla bean until just about to boil. Remove vanilla bean and scrape any remaining caviar into milk. Pour milk over white chocolate and let stand for 5 minutes, then whisk until white chocolate is melted and mixture is smooth. Scrape into food processor and process with the nut mixture until it reaches the consistency you desire.
Taste for salt, adding a pinch if necessary (you may not need any at all, as most packaged macadamia nuts are quite salty). Pour the spread into 4 clean half-pint jars and screw the lids on tight. Store in the refrigerator for up to 4 weeks.
Makes 4 half-pint jars
