Scented Sugar Trio

List of Ingredients
- 6 cups sugar, divided
- 1-1/2 vanilla beans, cut into 2-inch lengths
- Zest of 1 lemon
- 2 cinnamon sticks
Instructions
- For vanilla sugar:
In food processor, combine 2 cups sugar and vanilla beans. Process until vanilla beans are finely chopped. Strain sugar through fine-mesh sieve to remove any large pieces of vanilla bean. Let stand a few days before using so that sugar becomes infused with the aroma of vanilla.
- For lemon sugar:
Remove zest from lemon using vegetable peeler to peel wide strips. Set out to dry overnight. In bowl, combine 2 cups sugar with lemon peel, then transfer to Mason jars or other covered containers. Let stand for a few days before using so that the sugar becomes infused with the flavor of lemon.
- For cinnamon sugar:
Divide 2 cups sugar between Mason jars or other covered containers and insert 1 cinnamon stick into each jar. Let stand for a few days before using so that sugar becomes infused with aroma of cinnamon. Alternatively, combine 2 cups sugar with 2 tablespoons ground cinnamon, and divide between containers.
Makes about 2 cups per flavor.
