Vanilla Fleur de Sel

Recipe Introduction
"Sweet foods are perfect with a kick of vanilla, and I've already waxed poetic about the glorious muse that is Homemade Vanilla Sugar. But what about giving salt a hint of vanilla, too? There's no reason this dreamy, rich flavor — especially in bolder varieties from Tonga and India — can't go savory. Vanilla Fleur de Del is delicious as a finishing salt sprinkled over many savory dishes (like fish and delicate seafoods, spring vegetables, and green salads that incorporate seasonal fruits or berries). It's also an exquisite finishing touch on cookies, brownies, and caramels."

Recipe
All you need is a box of good flaky sea salt (I love Maldon Sea Salt Flakes) and a whole, split vanilla bean or two. Put them in a lidded jar and shake it every couple of days, letting the vanilla penetrate and perfume the salt for a week or so. The result is a parcel of unexpected culinary genius that makes the perfect gift for those perennial unimpressed foodies in your life.
• As a general rule, use about 1 cup of flaky sea salt per bean.
