    Vanilla Oil

    • 2 vanilla beans, chopped into 1/2-inch pieces
    • 5 Tbsp canola (or grapeseed) oil
    • 1/8 tsp salt


    Instructions


    1. Combine the vanilla beans, canola oil, and salt in a blender and process until fine. Strain through fine-mesh sieve and set aside.

      Vanilla oil can be used to flavor a basic vinaigrette. Follow your favorite recipe for classic or creamy vinaigrette. Stir 1 teaspoon of vanilla oil into 1/2 cup of vinaigrette. Serve with salads that incorporate fruits -- like apples, pears or citrus.
