Banana Praline Muffins

List of Ingredients
- 1/3 cup chopped pecans
- 3 Tbsp brown sugar
- 1 Tbsp sour cream

- 1 egg, lightly beaten
- 3 small ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1-1/2 cups pancake mix
Instructions
- To make the praline topping, add brown sugar to the chopped pecans and mix in sour cream; set aside.
- Combine egg, bananas, sugar and oil; mix well. Stir in pancake mix until just moistened.
- Fill greased muffin tins two-thirds full. Drop 1 teaspoon of the prepared pecan mixture in center of each muffin. Bake at 400 degrees for 15 to 20 minutes or until done.
Makes 12 muffins.
