Berry Cream Muffins

List of Ingredients
- 2 cups flour
- 1 cup sugar
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1½ cups fresh or frozen* raspberries or blueberries
- 2 eggs, lightly beaten
- 1 cup (8 ounces) sour cream
- ½ cup vegetable oil
- ½ tsp vanilla extract
Instructions
- Preheat oven to 400° F.
- In large bowl, combine flour, sugar, baking powder, baking soda and salt; add berries and toss gently. In separate bowl, combine eggs, sour cream, oil and vanilla; mix well. Stir into dry ingredients just until moistened.
- Fill greased muffin cups two-thirds full. Bake in preheated oven 18 to 22 minutes, or until toothpick comes out clean. Cool 5 minutes before removing from pan to wire rack.
Makes about 1 dozen.
Final Comments
* If using frozen berries, do not thaw before using.
