    Berry Cream Muffins

    From "The Taste of Home Cookbook"

    List of Ingredients


    • 2 cups flour
    • 1 cup sugar
    • ½ tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • 1½ cups fresh or frozen* raspberries or blueberries
    • 2 eggs, lightly beaten
    • 1 cup (8 ounces) sour cream
    • ½ cup vegetable oil
    • ½ tsp vanilla extract


    Instructions


    1. Preheat oven to 400° F.

    2. In large bowl, combine flour, sugar, baking powder, baking soda and salt; add berries and toss gently. In separate bowl, combine eggs, sour cream, oil and vanilla; mix well. Stir into dry ingredients just until moistened.

    3. Fill greased muffin cups two-thirds full. Bake in preheated oven 18 to 22 minutes, or until toothpick comes out clean. Cool 5 minutes before removing from pan to wire rack.

      Makes about 1 dozen.

    * If using frozen berries, do not thaw before using.
