    Blueberry Streusel Muffins

    List of Ingredients


    • 1 cup blueberries, fresh or frozen
    • 2 cups flour
    • 2 tsp baking powder
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 2/3 cup sugar
    • 1 egg, beaten
    • 1/2 cup milk
    • 1 tsp lemon zest
    • 1/3 cup unsalted butter, melted
    • *
    • -- For the Streusel Topping --
    • 1-2/3 cups flour
    • 1/2 cup sugar
    • 1 stick unsalted butter
    • 1 tsp cinnamon


    Instructions


    1. Preheat oven to 400 degrees. Prepare the streusel topping first by placing the butter and sugar in a mixing bowl and beating with the paddle attachment for a stand mixer or using a hand mixer. Beat the butter until it is nice and creamy. Add the flour and cinnamon and mix until all of the flour is incorporated and it is very crumbly. Set aside.

    2. In a small mixing bowl, combine the dry ingredients: flour, salt, baking powder and baking soda, and the sugar. In a large mixing bowl, combine the milk, melted butter, and beaten egg. Slowly mix the dry ingredients into the egg/milk mixture and stir until well blended (do not overmix). Stir in the blueberries and lemon zest.

    3. Spoon into muffin tins, about 3/4 full. Top with a tablespoon of the streusel topping and bake for 12 to 15 minutes.

      Serve warm.
