    Cherry Streusel Muffins

    Adapted from "Mornings Inn Style"

    List of Ingredients


    • 1½ cups flour
    • ¼ cup granulated sugar
    • ¼ cup dark brown sugar
    • 2 tsp baking powder
    • ¼ tsp salt
    • 1 tsp ground cinnamon
    • 1 egg, slightly beaten
    • ½ cup milk
    • 1¼ cups pitted tart cherries
    • 1 tsp grated lemon zest
    • Streusel (recipe follows)


    Instructions


    1. Preheat oven to 350° F. Coat a 12-cup muffin pan with vegetable oil spray.

    2. In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, salt and cinnamon. Mix egg, butter and milk and pour into a well in the center of the dry ingredients. Stir with a wooden spoon until ingredients are just combined. Stir in cherries and lemon zest. Fill each muffin cup three-quarters full.

    3. Prepare streusel. Sprinkle evenly over each muffin.
      Bake in preheated oven 20 to 25 minutes, or until nicely browned and firm. Remove from oven and let sit about 10 minutes, then run knife around the edges to loosen and remove.

      Makes 9 to 12 muffins.


      STREUSEL

      • ½ cup chopped pecans
      • ½ cup dark brown sugar
      • ¼ cup flour
      • 1 tsp ground cinnamon
      • 1 tsp lemon zest
      • 2 Tbsp unsalted butter, melted

      In small bowl, combine pecans, brown sugar, flour, cinnamon and lemon zest. Pour in melted butter and stir.
