    Florida Orange and Lemon Muffins

    • 2 cups all-purpose flour
    • 1 cup plus 1 Tbsp sugar, divided
    • 1½ tsp baking powder
    • 1 tsp ground cardamom
    • ½ tsp baking soda
    • ½ tsp salt
    • 1 cup sour cream
    • ½ cup butter, melted
    • 2 Tbsp finely grated orange zest
    • 2 large eggs
    • 2 tsp vanilla extract, divided
    • ¼ cup sliced almonds
    • 1 Tbsp finely grated lemon zest


    Instructions


    1. Preheat oven to 350° F.
      In a large bowl, combine flour, 1 cup sugar, baking powder, cardamom, baking soda and salt; make a well in center of mixture. In a small bowl, combine sour cream, butter, orange zest, eggs and 1½ teaspoons vanilla extract. Add to flour mixture, stirring just until moistened. Place paper baking cups in a 12-cup muffin pan; spoon batter into cups, filling two-thirds full.

    2. In a small bowl, combine almonds, lemon zest, 1 tablespoon sugar, and ½ teaspoon vanilla; sprinkle evenly over batter.

    3. Bake for 24 minutes, or until golden brown and a wooden pick inserted in center comes out clean. Remove from pans immediately, and cool on wire racks.

      Makes 12 muffins.
