Florida Orange and Lemon Muffins

- 2 cups all-purpose flour
- 1 cup plus 1 Tbsp sugar, divided
- 1½ tsp baking powder
- 1 tsp ground cardamom
- ½ tsp baking soda
- ½ tsp salt
- 1 cup sour cream
- ½ cup butter, melted
- 2 Tbsp finely grated orange zest
- 2 large eggs
- 2 tsp vanilla extract, divided
- ¼ cup sliced almonds
- 1 Tbsp finely grated lemon zest
Instructions
- Preheat oven to 350° F.
In a large bowl, combine flour, 1 cup sugar, baking powder, cardamom, baking soda and salt; make a well in center of mixture. In a small bowl, combine sour cream, butter, orange zest, eggs and 1½ teaspoons vanilla extract. Add to flour mixture, stirring just until moistened. Place paper baking cups in a 12-cup muffin pan; spoon batter into cups, filling two-thirds full.
- In a small bowl, combine almonds, lemon zest, 1 tablespoon sugar, and ½ teaspoon vanilla; sprinkle evenly over batter.
- Bake for 24 minutes, or until golden brown and a wooden pick inserted in center comes out clean. Remove from pans immediately, and cool on wire racks.
Makes 12 muffins.
