French Raspberry Muffins

- 5 Tbsp butter
- 1/2 cup sugar
- 1 egg
- 1/2 cup milk
- 1-1/2 cups flour
- 2-1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp nutmeg
- Raspberry preserves (for filling)

- 1/2 cup melted butter
- 1/2 cup sugar
- 1 tsp cinnamon
Instructions
- Cream butter and sugar together. Add egg and milk; mix well. Stir in flour, baking powder, salt, and nutmeg. Divide batter into 2 equal portions.
- Using one portion, spoon an equal amount into each greased muffin cup. In center of batter, place 1 teaspoon of the raspberry jam for large muffins (1/2 teaspoon for small muffins). Cover with remaining batter.
- Bake at 350 degrees for 20 to 25 minutes, until golden brown. Let cool in pan for 5 minutes; turn out. Roll muffin tops in melted butter, then dip in sugar mixed with cinnamon.
Makes 12 to 15 large muffins.
