    List of Ingredients


    • 5 Tbsp butter
    • 1/2 cup sugar
    • 1 egg
    • 1/2 cup milk
    • 1-1/2 cups flour
    • 2-1/2 tsp baking powder
    • 1/4 tsp salt
    • 1/4 tsp nutmeg
    • Raspberry preserves (for filling)

    • 1/2 cup melted butter
    • 1/2 cup sugar
    • 1 tsp cinnamon


    Instructions


    1. Cream butter and sugar together. Add egg and milk; mix well. Stir in flour, baking powder, salt, and nutmeg. Divide batter into 2 equal portions.

    2. Using one portion, spoon an equal amount into each greased muffin cup. In center of batter, place 1 teaspoon of the raspberry jam for large muffins (1/2 teaspoon for small muffins). Cover with remaining batter.

    3. Bake at 350 degrees for 20 to 25 minutes, until golden brown. Let cool in pan for 5 minutes; turn out. Roll muffin tops in melted butter, then dip in sugar mixed with cinnamon.

      Makes 12 to 15 large muffins.
