    Kona Coconut Muffins

    List of Ingredients


    • 1/2 cup unsalted butter, at room temperature
    • 1/2 cup granulated sugar
    • 1/2 cup lightly packed brown sugar
    • 2 eggs
    • 1-3/4 cups flour
    • 1 Tbsp baking powder
    • 1/4 tsp salt
    • 1/2 cup brewed dark roast coffee, cooled slightly
    • 1/3 cup milk
    • 2 tsp vanilla extract
    • 1/2 cup coarsely chopped walnuts
    • 3/4 cup sweetened coconut


    Instructions


    1. Grease and flour 12 muffin cups. In a large bowl of an electric mixer, cream the butter with the granulated sugar and brown sugar until light and fluffy. Beat in the eggs, one at a time.

    2. Sift together the flour, baking powder and salt. Combine the coffee, milk and vanilla. Alternatively blend the coffee and flour mixtures into the creamed butter mixture. Stir in the walnuts and coconut.

    3. Fill the muffin tins and bake in a preheated 375º F oven until a toothpick inserted in the center comes out clean, 25 to 35 minutes. Cool briefly on a rack before unmolding.

      Makes 12 muffins.
