    Oatmeal Muffins with Orange Butter

    List of Ingredients


    • 1-1/3 cups quick-cooking oats
    • 1-1/4 cups all-purpose flour
    • 1/2 cup sugar
    • 1 Tbsp baking powder
    • 1 tsp salt
    • 1/3 cup sweet cream butter
    • 1 cup milk
    • 1 egg
    • 1/2 cup chopped pecans
    • *
    • -- For the Orange Butter --
    • 1/2 cup sweet cream butter, softened
    • 1 Tbsp powdered sugar
    • 1 tsp grated orange peel


    Instructions


    1. Preheat oven to 400 degrees (F).

    2. In large bowl, combine oats, flour, sugar, baking powder, and salt. Cut in butter until mixture resembles small peas. Combine milk and egg; pour all at once into dry mixture. Mix just until ingredients are moistened. Stir in pecans.

    3. Spoon mixture into a greased muffin tin. Bake for 17 to 20 minutes or until golden brown. Cool for 5 minutes on a wire rack. Remove from pan.

    4. In small mixer bowl, combine orange butter ingredients. Beat at medium speed, scraping bowl occasionally, until light and fluffy -- 2 to 3 minutes.

      Serve orange butter with muffins. (Store any remaining orange butter in refrigerator.)

      Yield: 12 muffins,
      1/2 cup orange butter
