Oatmeal Muffins with Orange Butter

- 1-1/3 cups quick-cooking oats
- 1-1/4 cups all-purpose flour
- 1/2 cup sugar
- 1 Tbsp baking powder
- 1 tsp salt
- 1/3 cup sweet cream butter
- 1 cup milk
- 1 egg
- 1/2 cup chopped pecans

- -- For the Orange Butter --
- 1/2 cup sweet cream butter, softened
- 1 Tbsp powdered sugar
- 1 tsp grated orange peel
Instructions
- Preheat oven to 400 degrees (F).
- In large bowl, combine oats, flour, sugar, baking powder, and salt. Cut in butter until mixture resembles small peas. Combine milk and egg; pour all at once into dry mixture. Mix just until ingredients are moistened. Stir in pecans.
- Spoon mixture into a greased muffin tin. Bake for 17 to 20 minutes or until golden brown. Cool for 5 minutes on a wire rack. Remove from pan.
- In small mixer bowl, combine orange butter ingredients. Beat at medium speed, scraping bowl occasionally, until light and fluffy -- 2 to 3 minutes.
Serve orange butter with muffins. (Store any remaining orange butter in refrigerator.)
