    Orange Marmalade Muffins

    List of Ingredients


    • 1¾ cups all-purpose flour
    • ¼ cup sugar
    • 2 tsp baking powder
    • ¾ tsp salt
    • 2 eggs, lightly beaten
    • ¾ cup milk
    • ½ cup orange marmalade
    • ¼ cup butter, melted
    • Orange Marmalade Icing (recipe follows)


    Instructions


    1. Preheat oven to 400° F. Grease twelve 2½-inch muffin cups or line with paper bake cups. In a medium bowl, combine flour, sugar, baking powder, and salt. Make a well in center of flour mixture; set aside.

    2. In another bowl, combine eggs, milk, marmalade, and butter. Add egg mixture all at once to flour mixture. Stir just until batter is moistened (batter should be lumpy).

    3. Spoon batter into prepared muffin cups, filling each two-thirds full. Bake for 20 to 25 minutes, or until golden and a wooden toothpick inserted in centers comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups. Cool muffins on wire rack. Spoon Orange Marmalade Icing over each muffin.

      ORANGE MARMALADE ICING

      In a small bowl, combine 2 cups powdered sugar, 1/3 cup orange marmalade, and 1 tablespoon softened butter or cream cheese. Stir in milk until icing reaches drizzling consistency.
