Orange Marmalade Muffins

- 1¾ cups all-purpose flour
- ¼ cup sugar
- 2 tsp baking powder
- ¾ tsp salt
- 2 eggs, lightly beaten
- ¾ cup milk
- ½ cup orange marmalade
- ¼ cup butter, melted
- Orange Marmalade Icing (recipe follows)
Instructions
- Preheat oven to 400° F. Grease twelve 2½-inch muffin cups or line with paper bake cups. In a medium bowl, combine flour, sugar, baking powder, and salt. Make a well in center of flour mixture; set aside.
- In another bowl, combine eggs, milk, marmalade, and butter. Add egg mixture all at once to flour mixture. Stir just until batter is moistened (batter should be lumpy).
- Spoon batter into prepared muffin cups, filling each two-thirds full. Bake for 20 to 25 minutes, or until golden and a wooden toothpick inserted in centers comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups. Cool muffins on wire rack. Spoon Orange Marmalade Icing over each muffin.
Makes 12 muffins.

ORANGE MARMALADE ICING
In a small bowl, combine 2 cups powdered sugar, 1/3 cup orange marmalade, and 1 tablespoon softened butter or cream cheese. Stir in milk until icing reaches drizzling consistency.
