    Pecan Pie Muffins

    List of Ingredients


    • 1 cup packed dark brown sugar
    • ½ cup all-purpose flour
    • 1 cup pecans
    • 2/3 cup soft butter
    • 2 eggs, beaten


    Instructions


    1. Preheat oven to 350° F. Grease and flour two mini muffin tins.

    2. In a medium bowl, combine brown sugar, flour and pecans. Crumble this mixture with your hands until it is the consistency of cornmeal. Beat butter and eggs until smooth. Stir into the dry mixture until creamy.

    3. Spoon batter into muffin tins, filling them about two-thirds full. Bake for 20 to 25 minutes. Cool on wire racks.

      Makes 2 dozen.
