    Pumpkin Spice Muffins

    List of Ingredients


    • 2 cups all-purpose flour
    • 2 tsp baking powder
    • 3 Tbsp brown sugar
    • ½ tsp salt
    • ½ tsp cinnamon
    • ¼ tsp ground cloves
    • ¼ tsp ground ginger
    • 2 eggs
    • ¾ cup milk
    • ¼ cup melted shortening
    • ½ cup mashed pumpkin
    • ½ cup Grape-Nuts breakfast cereal


    Instructions


    1. Preheat the oven to 400° F. Grease a standard 12-cup muffin pan or line with paper baking cups.

    2. Sift together the flour, baking powder, brown sugar, salt, and spices. In a separate bowl, beat the eggs, then add the milk and shortening. Beat briefly to blend. Stir in the pumpkin and Grape-Nuts. Add this mixture to the dry ingredients all at once, stirring only until the flour is moistened.

    3. Fill the prepared muffin cups two-thirds full and bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

      Makes 12 muffins
