Pumpkin Spice Muffins

- 2 cups all-purpose flour
- 2 tsp baking powder
- 3 Tbsp brown sugar
- ½ tsp salt
- ½ tsp cinnamon
- ¼ tsp ground cloves
- ¼ tsp ground ginger
- 2 eggs
- ¾ cup milk
- ¼ cup melted shortening
- ½ cup mashed pumpkin
- ½ cup Grape-Nuts breakfast cereal
Instructions
- Preheat the oven to 400° F. Grease a standard 12-cup muffin pan or line with paper baking cups.
- Sift together the flour, baking powder, brown sugar, salt, and spices. In a separate bowl, beat the eggs, then add the milk and shortening. Beat briefly to blend. Stir in the pumpkin and Grape-Nuts. Add this mixture to the dry ingredients all at once, stirring only until the flour is moistened.
- Fill the prepared muffin cups two-thirds full and bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Makes 12 muffins
