    Rhubarb Pecan Muffins

    List of Ingredients


    • 2 cups flour
    • 3/4 cup sugar
    • 1-1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1 tsp salt
    • 3/4 cup chopped pecans
    • 1 large egg, beaten
    • 1/4 cup oil
    • 2 tsp grated orange peel
    • 3/4 cup orange juice
    • 1-1/4 cups chopped rhubarb


    Instructions


    1. Mix the flour, sugar, baking powder, baking soda, salt and pecans. In a separate bowl, combine the egg, oil, orange peel, orange juice and rhubarb. Pour wet ingredients into dry ingredients and mix quickly.

    2. Fill well-greased muffin pans three-quarters full. Bake at 350 degrees (F) for 25 to 30 minutes.

    Innkeeper Comments: Don't omit the orange peel -- it adds zest. Frozen rhubarb doesn't work as well, so make the most of it when it's fresh.
