Rhubarb Pecan Muffins

- 2 cups flour
- 3/4 cup sugar
- 1-1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 3/4 cup chopped pecans
- 1 large egg, beaten
- 1/4 cup oil
- 2 tsp grated orange peel
- 3/4 cup orange juice
- 1-1/4 cups chopped rhubarb
Instructions
- Mix the flour, sugar, baking powder, baking soda, salt and pecans. In a separate bowl, combine the egg, oil, orange peel, orange juice and rhubarb. Pour wet ingredients into dry ingredients and mix quickly.
- Fill well-greased muffin pans three-quarters full. Bake at 350 degrees (F) for 25 to 30 minutes.

Innkeeper Comments: Don't omit the orange peel -- it adds zest. Frozen rhubarb doesn't work as well, so make the most of it when it's fresh.
