Sour Cherry Muffins

- 1-1/2 cups or 1 (16-oz.) can tart cherries, drained
- 1-1/4 cups unbleached white flour
- 1 cup whole wheat pastry flour
- 1/2 cup fructose or 3/4 cup sugar
- 1/4 tsp salt
- 1/4 tsp coriander (optional)
- 2 tsp baking powder
- 2 eggs, lightly beaten
- 1/2 cup vegetable oil
- 1 tsp vanilla
- 1/2 cup buttermilk (or plain milk)
Instructions
- Fill muffin pan with paper liner cups. Preheat oven to 375 degrees. Dust cherries with 1/2 cup white flour and set aside.
- Sift together dry ingredients and set aside.
- In a large mixing bowl, blend eggs, oil, vanilla, and milk, and stir well. Add dry ingredients, stirring lightly until all is moistened. Fold in cherries.
- Spoon mixture into muffin cups. Bake at 375 degrees until set and golden, about 25 to 30 minutes. Let sit for 10 minutes before serving.
Makes 12 muffins.
