    Sour Cherry Muffins

    List of Ingredients


    • 1-1/2 cups or 1 (16-oz.) can tart cherries, drained
    • 1-1/4 cups unbleached white flour
    • 1 cup whole wheat pastry flour
    • 1/2 cup fructose or 3/4 cup sugar
    • 1/4 tsp salt
    • 1/4 tsp coriander (optional)
    • 2 tsp baking powder
    • 2 eggs, lightly beaten
    • 1/2 cup vegetable oil
    • 1 tsp vanilla
    • 1/2 cup buttermilk (or plain milk)


    Instructions


    1. Fill muffin pan with paper liner cups. Preheat oven to 375 degrees. Dust cherries with 1/2 cup white flour and set aside.

    2. Sift together dry ingredients and set aside.

    3. In a large mixing bowl, blend eggs, oil, vanilla, and milk, and stir well. Add dry ingredients, stirring lightly until all is moistened. Fold in cherries.

    4. Spoon mixture into muffin cups. Bake at 375 degrees until set and golden, about 25 to 30 minutes. Let sit for 10 minutes before serving.

      Makes 12 muffins.
