Sour Cream Peach Muffins

- 1-1/2 cups brown sugar
- 2/3 cup oil
- 1 egg
- 1 cup sour cream
- 1 tsp salt
- 1 tsp vanilla
- 1 tsp baking soda
- 2-1/2 cups flour
- 1-1/2 cups peaches (fresh or canned), drained and chopped
- 1/2 cup chopped nuts
Instructions
- Combine brown sugar, oil and egg in a mixing bowl.
- In another bowl, mix the sour cream, salt, vanilla and baking soda. Add this to the mixing bowl and slowly blend in the flour. Do not overmix. Fold in the peaches and nuts.
- Pour mixture into muffin cups and sprinkle with sugar and/or cinnamon. Put a bit of butter on top of each. Sprinkle nuts on top for a nuttier flavor, if desired. Bake at 325 degrees for 30 minutes.
Yield: 15 to 20 muffins
