Strawberry Shortcake Muffins

- 2 cups all-purpose flour
- 2 tsp baking powder
- ¾ cup sugar
- 1 stick cold butter, cut into cubes
- 1 egg
- 1 tsp vanilla
- 1 cup heavy cream
- 1½ cups diced fresh strawberries
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F. Grease or line 12 muffin cups with paper liners.
- In a large bowl, whisk together flour, baking powder, and sugar. Cut in cold butter with a pastry blender or two knives until small pea-size pieces. In a small bowl, mix together egg, vanilla, and cream. Add this mixture all at once to flour mixture. Stir with a spoon just until blended. Gently mix in strawberries.
- Spoon batter into prepared muffin cups, making sure each muffin has some strawberries in it, and bake 22 to 25 minutes, or until a tester inserted in center comes out clean. Cool completely in pan before removing, as they are very soft while warm. Sprinkle with powdered sugar once cooled.
Makes 12 muffins
