- 1/4 cup all-purpose flour

- 2 cups all-purpose flour
- 2/3 cup packed light brown sugar
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup buttermilk
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup (1 stick) unsalted butter, melted and slightly cooled
Instructions
- Preheat oven to 375 degrees. Spray a 12-cup muffin pan with cooking spray and set aside.
- Prepare the topping: In a medium bowl, combine the softened butter, brown sugar, oats, flour, walnuts, cinnamon, and nutmeg, stirring with a fork until the mixture is crumbly. Set aside.
- Prepare the batter: In a large bowl, combine the flour, brown sugar, baking powder, soda, salt, cinnamon, and nutmeg. Stir until well blended.
- Whisk together the buttermilk, egg, and vanilla. Pour into the dry ingredients, followed by the melted butter. Stir until evenly moistened; do not overwork.
- Spoon the batter evenly into the prepared muffin cups. Sprinkle the topping over the tops. Bake until golden and a toothpick inserted in the center comes out clean.
- Cool on a wire rack 10 minutes before unmolding.
Makes 12 muffins.
