    Gemma's Zucchini Muffins

    List of Ingredients


    • 1-1/2 cups flour
    • 1/3 cup dark brown sugar
    • 1-1/2 tsp baking powder
    • 1/2 tsp salt
    • 1/2 tsp nutmeg
    • 1/2 cup toasted walnuts, chopped *
    • 1-2/3 cups chopped zucchini
    • 2 eggs
    • 1/3 cup olive oil (recipe calls for Lucini Premium Select)
    • 1/2 cup buttermilk


    Instructions


    1. Place paper liners in 12 muffin cups. Heat oven to 450 degrees (F).

    2. Mix flour, sugar, baking powder, salt and nutmeg in bowl, sifting to remove any lumps. In another bowl, mix together walnuts and zucchini. In third bowl, whisk together eggs, olive oil and buttermilk. Add walnut-zucchini mixture to wet ingredients; stir in dry mixture enough to moisten batter. Place 1/3 cup of batter in each muffin cup.

    3. Bake in center of oven 22 to 25 minutes, until wooden toothpick inserted in center comes out clean. Remove from pan immediately. Cool before serving.

      Makes 12 muffins.



    Final Comments


    * To toast the walnuts, heat a small frying pan on high, add nuts, and stir until just beginning to brown.
