Crab & Smoked Gouda Phyllo Triangles

List of Ingredients
- 1 lb. phyllo dough
- 1-1/2 lbs. Dungeness crab
- 1/4 lb. smoked Gouda cheese, grated
- 4 scallions, sliced
- 1/4 cup mayonnaise
- 1/2 lb. unsalted butter, melted
Instructions
- Place the phyllo dough under a damp cloth.
- Mix together the Dungeness crab, the grated smoked Gouda, the sliced scallions and mayonnaise. Blend well. Adjust seasoning.
- Place one sheet of phyllo dough on a cutting board and brush with melted butter. Place another sheet of phyllo dough on top and brush with butter. Repeat again.
- Place 5 individual tablespoons of stuffing on the end closest to you. Cut into 5 long strips. Fold each of the phyllo strips like a flag. Seal the end with a little butter. Repeat until all the phyllo and stuffing is gone.
- Place on a cookie sheet. Bake in a 350-degree oven until golden brown. (Can be made a day in advance. Also freezes well.)
