    Glazed Apple Tart Pancake

    List of Ingredients


    • Butter
    • 4 eggs
    • 1 cup flour
    • 1 cup heavy cream
    • 2 Tbsp milk
    • 1/2 cup granulated sugar
    • 4 large Red Delicious apples, peeled and cored


    Instructions


    1. Preheat oven to 475 degrees (F). Spray 6 individual 8-inch oblong baking dishes with non-stick cooking spray. In the bottom of each, place 1 tablespoon butter. Set aside.

    2. Break the eggs into the top of a blender jar, followed by the flour, cream and milk. Blend until smooth and set aside.

    3. In a skillet, place the granulated sugar in the bottom of the pan. Heat the sugar over medium heat until it dissolves and becomes a caramel brown color. Be careful not to burn. Slice the apples into the caramel sugar. Stir to coat and allow the apples to cook slowly until just tender and caramelized. (The juice from the cooking apples will dilute the caramel.)

    4. When apples are almost done, place the baking dishes in the oven on a baking sheet. Bake 3 to 4 minutes or until the butter is melted but not browned. Remove from the oven.

    5. Arrange apple slices down the center of each dish. Spoon over any leftover caramel. Pour batter over the apples until about two-thirds full. Place in the oven (in center rack position) and bake 12 minutes or until puffed and golden. Remove from oven; serve in their individual dishes.

      Serve alone or with maple syrup.
