    Cappuccino Chip Coffee Bars

    List of Ingredients


    • 1/3 cup solid vegetable shortening
    • 1 cup firmly packed brown sugar
    • 1 egg
    • ½ cup double-strength hot coffee or espresso
    • 1-2/3 cups sifted flour
    • ½ tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • ½ tsp cinnamon
    • ½ cup chocolate chips
    • ¼ cup chopped walnuts
    • .
    • -- Coffee Glaze --
    • 1½ cups sifted confectioners' sugar
    • 1 Tbsp butter, softened
    • 1 tsp vanilla extract
    • 3 Tbsp strong, hot coffee or espresso


    Instructions


    1. Preheat oven to 375°. Lightly grease or spray a 9- x 13-inch baking pan.

    2. Cream shortening and brown sugar; blend in egg and the ½ cup coffee. Sift flour with baking powder, baking soda, salt, and cinnamon. Mix well with wet ingredients and stir in chocolate chips and walnuts. Spread batter in baking pan and bake until bars turn golden and toothpick inserted in center comes out clean, 10 to 15 minutes. Cool in baking pan on wire rack.

    3. To make coffee glaze:
      In small mixing bowl blend confectioners' sugar and butter until smooth, then slowly drizzle in vanilla and the 3 tablespoons coffee to make a thin icing (add more coffee if needed). Pour over cooled bars in baking pan and, when icing is set, cut into squares.

      Makes 20 bars.
