Blackberry Mousse

List of Ingredients
- 1 can Oregon blackberries
- Water
- 1/4 cup sugar
- 1 envelope gelatin
- 1 egg white, stiffly beaten
- 1 cup heavy cream, whipped
- 1 Tbsp orange liqueur
Instructions
- Drain blackberries; reserve syrup. Reserve 6 blackberries for garnish.
- Add water to reserved syrup to equal 1 cup. Heat blackberries, syrup mixture and sugar. Soften gelatin in 1/4 cup of water; stir into blackberry mixture to dissolve. Chill until mixture is partially thickened.
- Fold in beaten egg white, whipped cream and liqueur. Chill until nearly set. Spoon into 6 stemmed goblets. Garnish with reserved blackberries. Refrigerate until served.
Makes 6 servings.
