    Blackberry Mousse

    List of Ingredients


    • 1 can Oregon blackberries
    • Water
    • 1/4 cup sugar
    • 1 envelope gelatin
    • 1 egg white, stiffly beaten
    • 1 cup heavy cream, whipped
    • 1 Tbsp orange liqueur


    Instructions


    1. Drain blackberries; reserve syrup. Reserve 6 blackberries for garnish.

    2. Add water to reserved syrup to equal 1 cup. Heat blackberries, syrup mixture and sugar. Soften gelatin in 1/4 cup of water; stir into blackberry mixture to dissolve. Chill until mixture is partially thickened.

    3. Fold in beaten egg white, whipped cream and liqueur. Chill until nearly set. Spoon into 6 stemmed goblets. Garnish with reserved blackberries. Refrigerate until served.

      Makes 6 servings.
