    Oregon Marionberry Cobbler

    • -- Topping Ingredients --
    • 1/2 cup butter
    • 1/2 cup sugar
    • 1 cup flour
    • 2 tsp baking powder
    • 1/4 tsp salt
    • 1/2 cup milk
    • .
    • -- Filling Ingredients --
    • 3 pints (6 cups) fresh marionberries
    • 1 cup sugar
    • 2 Tbsp cornstarch
    • 1/4 tsp nutmeg
    • 2 Tbsp lemon juice
    • 2 Tbsp butter
    • .
    • Vanilla ice cream (not optional)


    Instructions


    1. Preheat oven to 350 degrees (F). Butter an 11x7-inch (2-quart) baking dish.

    2. For the topping: Mix butter and sugar in food processor until light and fluffy. Add flour, baking soda, salt and milk. Mix to combine. Batter should be stiff.

    3. For the filling: Gently toss berries with sugar, cornstarch, nutmeg and lemon juice. Pour into baking dish; dot top with slices of butter.

    4. Spoon topping over berries. They will not be completely covered. Bake for 40 minutes, until pastry is golden and filling is bubbling.

      Serve warm with ice cream!
