    Eagles Nest Inn Chocolate Chip Cookies

    List of Ingredients


    • 3-1/2 cups unsifted flour
    • 1 tsp salt
    • 1 tsp baking soda
    • 8 ounces (2 cubes) Imperial margarine
    • 3/4 cup granulated white sugar
    • 3/4 cup packed brown sugar
    • 1 tsp vanilla
    • 2 large eggs
    • 12 ounces semisweet chocolate chips
    • 3/4 to 1 cup chopped walnuts, optional


    Instructions


    1. Preheat oven to 350 degrees (F). Mix the flour, salt and baking soda and set aside. In a separate bowl, cream the margarine, granulated sugar and brown sugar. Add the vanilla and eggs, and mix until just smooth.

    2. Gradually add the flour mixture to the creamed mixture, and mix well. With the added amount of flour in this recipe, the batter will be stiff. This stiffness is what keeps the cookies from going flat in the oven. Stir in chocolate chips and walnuts (if desired), using a wooden spoon.

    3. Form mixture into walnut-sized balls and place onto an ungreased cookie sheet. Bake for 12 minutes. Let cool for several minutes, but remove while still warm onto a rack for cooling. (Do not fully cool on cookie sheet, as they will continue to cook.)

      Makes approximately 5 dozen cookies.



    Final Comments


    For best results, use thick cookie sheets or two thin sheets placed together. Air insulate sheets work well, also. Thin sheets brown the bottoms too much.
