    Fresh Mushroom Soup

    List of Ingredients


    • 2 quarts chicken broth
    • 2 tsp granulated onion
    • 1 tsp granulated garlic
    • Salt and pepper to taste
    • 3 heaping Tbsp tomato paste
    • 1 large onion, sliced
    • 4 cups sliced mushrooms (preferably fresh and local, button or crimini)
    • One 4- to 6-ounce glass red wine
    • .
    • Toasted bread rounds
    • Shredded Swiss cheese


    Instructions


    1. In stockpot, bring to boil the chicken broth, granulated onion, garlic, salt, pepper and tomato paste. Reduce to simmer and add sliced onion and mushrooms. Cook until tender.

    2. Add wine during last 10 minutes of cooking time. Top with toasted bread rounds and shredded Swiss cheese.

      Serves 10 to 12
