Fresh Mushroom Soup

List of Ingredients
- 2 quarts chicken broth
- 2 tsp granulated onion
- 1 tsp granulated garlic
- Salt and pepper to taste
- 3 heaping Tbsp tomato paste
- 1 large onion, sliced
- 4 cups sliced mushrooms (preferably fresh and local, button or crimini)
- One 4- to 6-ounce glass red wine
- .
- Toasted bread rounds
- Shredded Swiss cheese
Instructions
- In stockpot, bring to boil the chicken broth, granulated onion, garlic, salt, pepper and tomato paste. Reduce to simmer and add sliced onion and mushrooms. Cook until tender.
- Add wine during last 10 minutes of cooking time. Top with toasted bread rounds and shredded Swiss cheese.
