    Grilled Salmon and Walla Walla Sweets

    List of Ingredients


    • 1/4 cup melted butter
    • 2 Tbsp lemon juice
    • 1/2 tsp fresh or dried dill
    • 4 (6- to 8-oz. each) salmon steaks, about 1 inch thick *
    • Salt
    • Freshly ground pepper
    • 2 Walla Walla sweet onions, sliced 3/4 inch thick
    • Oil
    • Lemon wedges


    Instructions


    1. Combine the butter, lemon juice and dill in a shallow dish. Season the salmon with salt and pepper, and arrange in the dish with the onions, coating both sides. Marinate 1/2 hour at room temperature or up to 4 hours in the refrigerator. (Butter will solidify.)

    2. Prepare a barbecue fire and place the grilling rack 4 to 6 inches from the heat. Brush the hot grill with oil.

    3. Place the salmon and onions on the grill, reserving the marinade. Grill the fish and onions, turning once and brushing with the marinade, 8 to 10 minutes or until fish just begins to flake.

      Transfer to a platter and garnish with lemon wedges.



    Final Comments


    * For this recipe, choose Chinook (also known as King), silver (Coho), or deep red sockeye steaks to team with Walla Walla sweet onions.
