Hale's Chocolate 'Celebration Porter' Cheesecake

- 10 ounces or 22 Oreo cookies, ground to a fine crumb
- 2 Tbsp melted butter

- 1-3/4 cups granulated sugar
- 1 cup sour cream
- 3 Tbsp cornstarch
- 3 lbs. cream cheese, softened
- 1 cup Hale's 'Celebration Porter' ale*
- 4 eggs
- 7 ounces semisweet chocolate, chopped and melted on low heat
Instructions
- To prepare the crust: Wrap the exterior of a 10-inch springform pan with several layers of aluminum foil. Combine the cookie crumbs and butter; press into the bottom of the pan. Set aside.
- To prepare the filling: In the bowl of a food processor, combine the sugar, sour cream and cornstarch; transfer to a large bowl.
- Working in batches, combine the softened cream cheese, ale and eggs, processing until smooth; scrape the bowl often. Transfer to the bowl with the sugar mixture. In the final batch, add the warm chocolate, then transfer to the bowl. Combine with a rubber spatula in a figure eight pattern. (At this point, you can add chunks of cookies or brownies.)
- Transfer the batter to the pan. Tamp the pan on the counter to release any air that may be in the batter. Set onto a sheet pan, then place in a preheated 275-degree (F) oven. Carefully fill the sheet pan with hot water. Bake the cheesecake 1 hour; check to make sure there is water in the pan and continue baking 1-1/4 hours. Turn the oven off, but don't open the door. Let the cheesecake cool in the oven 2-1/2 hours, then store overnight in the refrigerator.
- Run a knife around the outer edge of the cheesecake to loosen, then remove the sides of the pan. Cut the cake with a wet knife warmed in hot water.
Makes 16 servings.
* Hale's 'Celebration Porter' ale is a heavy dark ale; another similar ale can be substituted.
